I’ve wanted to create an apple cake since Marek brought me to his grandparents’ place and I had a slice of his grandmother’s famous apple cake (which, as it turned out later, actually came from a box). Since the cake itself is kind of easy to make, I decided to add some candied almonds to it, and the result was delightful! This the cake I’ll be making for our grandchildren one day.
For candied almonds you’ll need:
100g almonds
75g sugar
50ml water
1 tbsp ground cinnamon
Instructions:
- Combine the water, sugar, and cinnamon in a saucepan over medium heat
- Bring to a boil and add the almonds
- Cook and stir the mixture until the liquid evaporates and leaves a syrup-like coating on the almonds
- Pour the almonds onto a baking sheet lined with waxed paper
- Separate almonds using forks
- Allow to cool about 15 minutes
For apple cake you’ll need:
6 apples
4 eggs, separated
140g sugar
6 tbsp sour cream
Juice of half a lemon
140g flour
25g coconut oil
Instructions:
- Peel and core the apples, cut them into halves and slice them
- Beat the egg yolks with the sugar
- Add the lemon juice, sour cream and flour gradually, beating well
- Beat the egg whites until stiff and fold them in, then fold in the nuts
- Grease the springform pan with coconut oil and dust with flour
- Pour in half the cake mixture, arrange a layer of apples on top, and pour the remaining cake mixture over them
- Arrange the apple slices in circles on top, brush with coconut oil and sprinkle with sugar
- Bake in the oven at 180°C for 1 hour and 25 minutes, or until a skewer pushed into the cake comes out clean
