Apple cake with candied almonds

I’ve wanted to create an apple cake since Marek brought me to his grandparents’ place and I had a slice of his grandmother’s famous apple cake (which, as it turned out later, actually came from a box). Since the cake itself is kind of easy to make, I decided to add some candied almonds to it, and the result was delightful! This the cake I’ll be making for our grandchildren one day.

For candied almonds you’ll need:

100g almonds

75g sugar

50ml water

1 tbsp ground cinnamon


  • Combine the water, sugar, and cinnamon in a saucepan over medium heat
  • Bring to a boil and add the almonds
  • Cook and stir the mixture until the liquid evaporates and leaves a syrup-like coating on the almonds
  • Pour the almonds onto a baking sheet lined with waxed paper
  • Separate almonds using forks
  • Allow to cool about 15 minutes

For apple cake you’ll need:

6 apples

4 eggs, separated

140g sugar

6 tbsp sour cream

Juice of half a lemon

140g flour

25g coconut oil


  • Peel and core the apples, cut them into halves and slice them
  • Beat the egg yolks with the sugar
  • Add the lemon juice, sour cream and flour gradually, beating well
  • Beat the egg whites until stiff and fold them in, then fold in the nuts
  • Grease the springform pan with coconut oil and dust with flour
  • Pour in half the cake mixture, arrange a layer of apples on top, and pour the remaining cake mixture over them
  • Arrange the apple slices in circles on top, brush with coconut oil and sprinkle with sugar
  • Bake in the oven at 180°C for 1 hour and 25 minutes, or until a skewer pushed into the cake comes out clean
