Coffee and cookies ice cream


1 cup milk

2 cups heavy cream, divided

1/2 cup sugar

1/4 cup brown sugar

1/8 tsp salt

5 egg yolks

1/4 tsp vanilla paste

1/2 cup coffee

1/2 cup cookies, crushed


  • Combine milk, 1 cup heavy cream, sugars and salt in a medium saucepan, cooking over medium heat until sugars have dissolved. Add vanilla paste and coffee, stirring gently. Continue cooking the mixture until it’s steaming.
  • In a small bowl, whisk the egg yolks. Slowly drizzle 1 cup of hot liquid on them, whisking continuously. Return egg mixture to saucepan. Cook until mixture coats the back of a spatula.
  • Add 1 cup of the remaining heavy cream into a medium bowl. Pour warm mixture through a mesh strainer on it. Place bowl in an ice bath, stirring until cooled. Cover and chill for 4-6 hours.
  • Churn ice cream according to manufacturer’s directions. In the last 5 minutes, begin adding cookie pieces. Transfer to a freezer safe container, cover and freeze until firm.
